how to make spicy brinjal
To make spicy brinjal, first wash the brinjal thoroughly and clean it. Now make an incision in the brinjal from the middle and put it in water and leave it in separate water for some time so that it does not turn black. Now heat your kadhai. Now add oil to it. When the oil becomes hot, add mustard seeds, red chilies and curry leaves for the chickpeas. When it crackles well, add chopped onion to it. Now put the garlic which is minced in it.
Now cook it well, then add peanut powder and mango powder and stir it well. After some time, remove the water of the brinjal which you had left in the water and put it in this mixture. Now add pomegranate juice, jaggery and coconut milk to it. Now mix all these things well and let it cook for a while. Now add a pinch of amchur and serve hot hot brinjal with chapati or rice.
